Step 1 Put the potatoes in a sauce pan and cover with water. Turn on the heat. Cook the potatoes for 25 minutes after water starts boiling. When the potatoes are cooked, drain the water and let the potatoes cool until warm. Step 2 Fry the mushrooms and onions in vegetable oil until tender (until the onions are transparent and the moisture from the mushrooms evaporates). Add salt if necessary. Step 3 In a separate saucepan, mix tomato paste, sugar and salt, herbes de Provence seasoning, and pour boiled water. Step 4 Knead the potatoes dough: Add vegetable oil and flour to the warm potatoes. Do not add all flour at once – you might be needing less. Knead the potatoes well. The potato dough should not crumble. Step 5 Spread a sheet of slightly oiled plastic wrap on the table. Lay out the ready potato in the form of a rectangle and then put a layer of mushrooms on the potato. Step 6 Using the plastic wrap, make the potato roll. Discard the plastic wrap. Step 7 Cut the potato roll with mushrooms into pieces and place them vertically in a greased baking dish. Step 8 Pour the cooked tomato filling in the baking dish with the rolls. Step 9 Preheat oven to 360 F. Place the baking dish in the oven for 25 minutes. Step 10 Potato rolls with mushrooms are ready. Sprinkle the dish with fresh dill, serve, and enjoy!
