Step 1 In a bowl, combine oatmeal, flour, baking soda, salt, and sugar. Step 2 In a separate bowl, mix together milk, egg white, egg, butter and lemon zest. Step 3 Make the dough: Combine the two mixtures, mix until it becomes a homogeneous mass. Step 4 Gradually stir in the blueberries with a rubber spatula. Let it cool for 30 minutes. Step 5 Preheat a frying pan over medium heat. Pour olive oil on a frying pan. Put the dough in the frying pan and fry the pancakes. If the surface of the pancakes begins to bubble a little, turn them over and fry for another 3 minutes. 6. If desired, you can put sour cream on top of the finished pancakes. Add fresh berries and enjoy!
