Step 1 Fry carrots, onions, and garlic in vegetable oil. Step 2 Grind the peanuts in a blender. Step 3 Add a glass of water to the blender and keep grinding until creamy. Step 4 Boil water (or broth) in a saucepan. Add the fried vegetables and bring to a boil. The amount of water (or broth) to use depends on the desired thickness of the soup. Step 5 Put allspice, oregano, bay leaf, salt and pepper in the soup. Then add potatoes and cook for 20 minutes. Step 6 Put the blended peanuts in the saucepan with other ingredients, mix well so that there are no lumps. Step 7 Cook the peanut soup over low heat, stirring frequently, for 30 more minutes. Step 8 Sprinkle the peanut soup with parsley, serve and enjoy!
