Here is yet another approach to one of the most simple and diabetes-friendly breakfast dishes out there.
Step 1 Break the chicken eggs into a mug. Add salt and pepper. Step 2 Grate mozzarella on a fine grater Step 3 Add the cheese to the eggs and thoroughly mix. Step 4 Cut the cherry tomatoes in half. Step 5 Heat olive oil in a frying pan, add a pinch of coarse salt and fry the tomatoes over medium heat. Step 6 Add Italian spices the eggs and mix well. Step 7 Cut the mozzarella into small cubes. Step 8 Separate the basil leaves from the stems. Chop the leaves that are large. Step 9 Pour the egg mixture over the tomatoes. Step 10 As soon as the eggs set, add the quail eggs to them and then add the mozzarella. Reduce heat and cover. Step 11 Once the cheese melts, transfer the eggs to a plate and season with balsamic sauce. Step 12 Add the grated parmesan and garnish with basil leaves. Serve and enjoy!
