Great recipe for meat lovers. The pork is stuffed with garlic, and then baked in the sleeve. I serve meat with a delicious garlic sauce with hot peppers, herbs and lemon.
Ingredients:
Boneless pork – 2 lb.
Garlic (cut into large pieces) – 1 head
Salt and ground black pepper – to taste
For sauce:
Water – 1 cup
Olive oil – 1 cup
Garlic (minced) – 2 heads
Lemon juice and zest – from 1 lemon
Hot chili pepper (remove seeds and cut into small pieces) – 1 (optional)
Step 1 Wash the pork and pat dry it with a paper towel. Step 2 Make several cuts over the entire surface of the meat about ½” deep. Step 3 Stuff the meat with the pieces of garlic and season with salt and pepper. Step 4 Place the pork in a roasting sleeve and put it in the refrigerator for 3-6 hours. Step 5 Preheat oven to 430 F. Bake pork in a sleeve until tender (about 1 hour). Step 6 Remove the baked pork from the sleeve, put it on a dish, and cover with aluminum foil for about 15 minutes. Step 7 Make sauce: In a bowl, combine olive oil and cold water. Add parsley, cilantro, minced garlic, lemon zest and juice, salt, and fresh ground hot pepper (if desired). Step 8 Mix everything well and et the sauce sit for 10 minutes. Step 9 Cut the baked pork with garlic into slices. Step 10 Serve the meat with the sauce. The meat can be enjoyed hot or cold.
