The pan fried cod filet is so tender it melts in your mouth, while the combination of other ingredients makes these diabetes-friendly tacos truly amazing!
Step 1 Mix the flour and spices in a bowl. Lightly beat the eggs in a separate bowl. Pour breadcrumbs into the third bowl. Cut the fish into small strips. Step 2 Dip each piece of fish in flour, then in the egg and finally in the breadcrumbs. Put the fish on a baking sheet and refrigerate for 20 minutes. Step 3 While the fish is in the fridge, make mango salsa: Finely chop mango, avocado, cilantro, and onion. Mix and pour over the freshly squeezed lime juice. Step 4 Heat olive oil in a frying pan and fry the fish on both sides until golden brown. Step 5 Preheat oven to 350 F. Place taco tortillas on a baking sheet, and warm in the oven for about 10-15 minutes. Step 6 Put the pieces of fish, iceberg lettuce, and mango salsa in the tortillas. Garnish with thinly chopped chili pepper and cilantro leaves. Serve and enjoy!
