Recipe Details:
It’s hard to find more diabetic-friendly soup recipe than this one. Simple, healthy and tasty – these are the words that most precisely describe this soup.
Step 1 Chop all vegetables in medium pieces. Step 2 Put the turkey breast into a large saucepan. Add 2.5 liter of water. Bring to boil over high heat, then salt a little. Add some of the chopped vegetables (1/4 or 1/3) and cook uncovered for 1.5 hour. Remove the forming foam when necessary. Step 3 Preheat oven to 390 F. Cover a baking sheet with wax paper and put the rest of the vegetables on it. Sprinkle with olive oil and bake for 20 minutes. Step 4 Strain the broth after 1.5 hours of cooking. Cut the turkey breast into bite-size pieces and put back into the broth. Add the baked vegetables to the broth and bring the soup to boil, add paprika and cook for 20 minutes. Step 5 Turn off the heat. Add black pepper, close the lid, and let the soup sit for 10 minutes. Serve hot and enjoy!
