Step 1 Cut off the cap from the pumpkin and remove all the seeds. Step 2 Peel the ginger but don’t cut it. Put the apple wedges, peeled ginger, cinnamon stick, and, if desired, some walnuts and cranberries, into the pumpkin. Cover the pumpkin with the cut cap. Step 3 Preheat oven to 360 F. Bake the pumpkin in the oven for 1.5 hours. Step 4 Let the pumpkin cool. Remove the ginger and cinnamon stick. Serve and enjoy!
