This is a great, easy and tasty way to cook a zucchini. And it’s diabetic-friendly as well!
Step 1 Grate the zucchini on a fine grater and drain the juice. Step 2 Grate the onion into the same bowl. Add minced garlic, curry, paprika, and salt. Mix well. Step 3 Add quail eggs, mix, and then add the oat flour. Mix well again. Step 4 Preheat oil in a frying pan over high heat. Shape the pancakes with a tablespoon and put in the frying pan. Step 5 Once one side of the pancakes is browned, turn them over and reduce heat to medium. Cook until the other side is browned (about 4 more minutes). Step 6 Add lime juice, salt and pepper to sour cream. Mix. Serve as a sauce with pancakes. Enjoy!
