Zucchini stuffed with tomatoes, black beans, string beans and corn is a very healthy and diabetic-friendly dish that you can find in restaurants but that are also quite easy to cook at home.
Step 1 Preheat oven to 350 F, cut the zucchini lengthwise, salt it well and put it in the oven for 10 minutes. Step 2 Put tomatoes, black beans, string beans, corn, and garlic on a frying pan frying pan add water and simmer. The beans should boil and become soft. Step 3 When zucchini are ready, cool them and then take out the pulp with a spoon. Finely chop the pulp and add it to the frying pan with vegetables. Season the vegetable mix with salt and spices and continue to simmer, stirring continuously. Step 4 While cooking the vegetables, add some salt to zucchini shells and put them back into the oven.
