Step 1 Place finely chopped spinach in a large bowl. Add the cottage cheese and wheat bran. Mix well. Step 2 Heat olive oil in a frying pan. Add the chopped scallions and fry while stirring for 3 minutes. Step 4 Add the fried scallions to the cottage cheese and spinach mix. Add the nutmeg and mix everything together. Step 5 Whisk the egg whites until fluffy. Use a spatula to stir the whipped egg whites with the cottage cheese and spinach mix. Don’t add all egg whites at once. Rather do it in three steps. While doing so, add salt and ground black pepper to taste. If desired, you can add diced tomatoes into the mix. Step 6 Preheat oven to 350 F. Cover a baking form with wax paper, then place the ready mix into the baking form. Bake for half an hour. Serve and enjoy!
