Diabetic-friendly trout with zucchini, tomatoes, lemon and pepper is a true delicacy. Make this dish once and you will be willing to make it again shortly after you introduce yourself to this awesome dish.
Step 1 Wash, clean, and gut the fish. Remove the gills. Make several deep vertical cuts on the sides of the fish. Step 2 Place the fish on a baking sheet covered with aluminum foil greased with vegetable oil. Step 3 Rub the outside and inside of the trout with salt and pepper. Put one half of the chopped parsley and basil inside the fish, then pour the lemon juice on the fish and inside the fish as well. Step 4 Sprinkle the second half of the chopped parsley and basil on the trout. Then put all of the vegetables on the baking dish, around the fish. Salt the vegetables. Step 5 Pour some vegetable oil on the trout and vegetables. Step 6 Preheat oven to 390 F. Cover the baking sheet with aluminum foil (just cover, not seal). Bake the fish for 20 minutes, then remove the foil and bake for 15 more minutes. Step 7 Carefully place the ready fish and vegetables on a platter. Serve and enjoy!
