Ingredients:
Bell pepper (cut into medium pieces) – 4
Zucchini (cut into medium pieces) – 1
Egg plants (cut into medium pieces) – 3
Tomatoes (cut into medium pieces) – 2
Garlic (chopped) – 4 cloves
Onion (cut into semi-circles) – 2
Chili pepper (any hot pepper of your choice. Cut into rings) – to taste
Step 1 Make marinade: Put in a bowl garlic, dill, soy sauce, apple vinegar, and vegetable oil. Mix well. Step 2 Place all vegetables in a deep baking dish. Cover with the marinade. Add salt and pepper then mix thoroughly. Cover the baking dish with plastic wrap and leave to marinade for an hour. Step 3 Preheat oven to 360 F. Bake the dish in the oven for 40 minutes. Then serve to the plates, sprinkle with fresh dill, and enjoy!
