Barley with vegetables is a very filling and diabetic-friendly side dish that can complement virtually any main course and make your dinner complete.
Step 1 Wash and dry the barley. Step 2 Heat some vegetable oil on a frying pan. Put in carrots and onions and simmer over medium heat for 3 minutes, stirring occasionally. After that, put the stewed vegetables in a Dutch oven. Step 3 Add a can of sweet peas with liquid to the Dutch oven with stewed vegetables. Season with salt, pepper and spices, then mix thoroughly. Step 4 Preheat a frying pan. Put the barley on a dry frying pan and fry over medium heat for about 7 minutes (until lightly nutty smell), stirring occasionally. Step 5 Put the barley into the Dutch oven. Pour boiling water over the content of the Dutch oven, so that the content gets covered with water by about 1.5 inch. Step 6 Bring the water in the Dutch oven to boil over high heat. Reduce heat and cover the Dutch oven loosely with a lid. Cook the barley with vegetables for about 1 hour (until the barley is cooked). Stir when necessary and add a little water. If there was a lot of liquid, take off the lid and evaporate excess water over high heat. Step 7 Once the barley is ready, serve and enjoy!
