Cooking with wine adds a great deal of flavor. And it’s a healthy way to cook too! – Sautéing food in wine adds moisture to the dish without adding extra fatty ingredients such as butter or oil. Speaking of the latter, when you cook with wine, you can still use oil, but you just don’t need as much of it as when you cook without wine.

Choosing a proper wine for cooking is simple – avoid buying cooking wine. Your dish should “drink” the same wine you do. That’s because cooking wines often contain ingredients that are neither healthy nor tasty, including food coloring, preservatives, and salt.

The wine that you enrich your stew with doesn’t need to be expensive or fancy. Just make sure to use a dry wine of your choice, but not a sweet one. In other words, the less sugar the wine has the better. Use lighter wines when cooking pasta, chicken, or fish and heavier wines when you cook red meat or pasta with red sauce.

If the content of alcohol in your wine concerns you, take into account that alcohol evaporates quite significantly during cooking. The longer you simmer you dish in wine, the less alcohol remains in the dish. For example, after an hour of cooking, 75% of alcohol in your wine evaporates.

No matter what dish you cook, when you cook it in wine, the dish benefits from the bouquet of flavor the wine brings to it. Naturally, each wine has its own taste.
