Step 1 Rinse red beans and soak in room temperature water, in a saucepan, for 3 hours. Step 2 Drain the water and cover the beans again with water in proportion of 3 cups of water to 1 cup of beans. Step 3 Put the saucepan on high heat. As the content boils, reduce heat to a minimum, cover and cook for 1 hour 10 minutes. Step 4 While the beans are boiling, peel and slice the onions, garlic, carrots, and tomatoes. Step 5 After 1 hour 10 minutes of boiling the beans, add the chopped vegetables, mix with the beans, salt, cover and simmer for another 20 minutes. Serve hot and enjoy!
