Roasted chicken is a classic family recipe. In this diabetic-friendly recipe, the chicken drumsticks are roasted in the oven on a bed of vegetables. – A perfect meal in one dish!
Step 1 Rub the chicken with 2 tbsp. of olive oil, salt and spices and leave it for 30 minutes. Step 2 Chop the eggplant and soak in water and salt for at least half an hour. Then drain and rinse. Step 3 Cut the potatoes in half, and cut the zucchini, tomato, garlic, and onion into rings. Put the vegetable in a baking dish and sprinkle with 2 tbsp. of olive oil. Then put the chicken on top, breast side up, with its legs tied together with cooking string. Step 4 Preheat oven to 430°F. Put the baking dish in the oven and then reduce the temperature to 350 F. Roast the chicken until its internal temperature reaches 165°F. Step 5 Remove the chicken from the oven, cut into pieces, serve and enjoy!
