This is a recipe for a delicious dish that everybody knows and most people love. And besides being popular and tasty, it’s diabetic-friendly as well.
Step 1 Heat 1 tbsp. of oil in a frying pan. Add onion and bell pepper and fry until onion is golden brown (about 9 minutes). Remove from heat and let the onion and pepper cool. Step 2 In a large mixing bowl, beat 2 eggs and mix with 3 tbsp. of Greek yogurt. Step 3 Cut the crab meat into small pieces and add to the bowl with the eggs and yogurt. Step 4 Add the fried bell peppers, onions, and parsley to the bowl with crab meat, eggs and yogurt. Mix well. Cover and put in a fridge for 30 minutes. Step 5 With wet hands, divide the mixture into ½” thick crab cakes (patties). Step 6 Heat 1 tbsp. of olive oil and 1 tbsp. of butter in a frying pan. Fry the crab cakes for 5 minutes per side. If they start browning too quickly, reduce heat. Add more oil and butter if necessary. Serve and enjoy!
