Hardly anyone will disagree that baked filet mignon is a delicacy treat. Whether served hot or cold, this diabetic-friendly dish is enjoyed by many people.
Step 1 Rub the beef with salt and pepper on all sides. Step 2 Heat olive oil and melted butter in a large skillet with garlic and thyme. Step 3 Put meat on the skillet and fry on all sides until golden brown, while pouring the mix of oil and butter over it. Step 4 Preheat oven to 480 F. Wrap the beef in aluminum foil and put it on a baking sheet. Place the baking sheet in the center of the oven. Immediately reduce the temperature to 300 F and roast the beef to the desired doneness – from 15 to 25 minutes. Cool the beef in foil for about 35-40 minutes. Step 5 Carefully drain the juices from the roasted beef into a skillet. Cut the bell peppers, zucchini, and onions into thin strips. Step 6 Put the vegetables in the juice from the beef and fry over high heat for 3 minutes. Add basil leaves without stems and season with pepper. Step 7 Put the cooked vegetables on the plates. Cut the beef filet into slices about 1.5” think and place them on top of the vegetables. Serve and enjoy!
