These delicious fish cakes are a must for a diabetic-friendly menu. Served alone or with a side, such as stewed vegetables, brown rice, or wheat pasta, these fish cakes will make a perfect dinner main course.
Ingredients:
Fish fillet – 1 lb
Medium onion – 1
Medium carrot – 1
Chicken egg – 1
Amaranth flour – 3 tbsp.
Parsley – ½ bunch
Salt, ground black pepper, and fish seasoning – to taste
Step 1 In the meat grinder, scroll the fish fillet and then place it into a deep bowl. Step 2 Chop carrot and onion in the meat grinder. Step 3 Add flour, egg, chopped carrot and onion, salt, pepper and spices to the fish and mix everything well. Step 4 Shape cutlets from the minced fish and place the cutlets into a baking dish greased with vegetable oil. Step 5 Preheat oven to 355 F and place the baking dish into the oven. Bake for about 40 minutes. Serve and enjoy!
