Salmon is very healthy and diabetic-friendly fish. Try this recipe to enjoy a unique bouquet of flavors and aromas provided by the mix of wine, honey, soy sauce, and other ingredients.
Step 1 Make the marinade first: Combine white wine, soy sauce, honey, garlic, lime juice and peel. Step 2 Place the salmon in a shallow dish and pour over the marinade. Cover with plastic wrap and leave in the fridge to marinate overnight. Step 3 Preheat oven to 390 F. Place the tomatoes, cut side up, on a baking sheet and drizzle them with olive oil. Bake the tomatoes for 25 minutes. Step 4 Meanwhile, heat some olive oil in a large frying pan. Put in the salmon, season with spices of your choice if desired, and sauté for 5 minutes over high heat. Step 5 Arrange the baked tomatoes on plates, place the salmon fillets on top and pour over the remaining marinade. Serve and enjoy!
