Recipe Details:
A light and easy to make diabetic-friendly dish that can make a perfect main course if you are on a vegetarian diet.


Ingredients:
  • Firmed tofu (cut in cubes) – ½ lb.
  • Bell pepper (cut into strips) – 1
  • Celery (chopped) – 2/3 lb.
  • Ground ginger (finely grated) – ¼ cup
  • Garlic (finely chopped) – 2 cloves
  • Chili pepper (finely chopped) – 1
  • Soy sauce – 1 tbsp.
  • Salt and ground black pepper – to taste
  • Olive oil for frying
    Recipe Directions:
    Step 1
    Heat olive oil in a frying pan. Fry finger, chili pepper, and garlic for about 2 minutes.
    Step 2
    Pour two tablespoons of soy sauce over tofu and set aside for a few minutes.
    Step 3
    Boil the chopped celery until soft.
    Step 4
    Add the tofu, pepper, and celery to the frying pan with ginger, garlic and chili and fry for about 7 minutes, stirring occasionally. Then take off the heat, serve and enjoy!
