Ingredients:
Chicken breast – 1 lb.
Large fresh tomato (diced) – ¾ cup
Corn 8-inch tortillas – 3
Sliced onion – 2/3 cup
Barbeque sauce (low-sodium, low-sugar)
Lettuce (chopped) – ¾ cup
Bell pepper – 1
Scallions – ¼ cup
Salt, ground black pepper, other spices – to taste
Step 1 Cut chicken breast into small strips and season them with salt, black pepper and other spices. Step 2 Preheat grill. Mix chicken, onion, and bell pepper together and put on the hot grill. Step 3 Cook the chicken and vegetables for 3 minutes on one side, then turn on the other side, add scallions, pour barbeque sauce over the chicken and vegetables and grill for 2.5 more minutes. Step 4 When the chicken reaches 165 F, remove the chicken and vegetables from the grill and put on a plate. Step 5 Wrap the tortillas in aluminum foil and put them on the grill for 3 minutes to make them warm. Step 6 Fill the tortillas with the grilled chicken and vegetables. Serve with the lettuce and tomatoes on a side. Enjoy!
