Step 1 Put the eggplant slices and onion rings into a large bowl. Add salt and spices and mix well. Step 2 Mix water with vinegar and vegetable oil, add this mix to the eggplants and leave to marinate for 1 hour. Step 3 Cook on an open grill, on a wire rack, until golden brown on both sides. Step 4 Serve hot, although these eggplants taste great cold as well. Enjoy!
