Recipe Details:
This diabetic-friendly carrot and orange salad with spices is an authentic Moroccan dish with an interesting blend of flavors.


Ingredients:
  • Carrots (coarsely grated) – 1 lb.
  • Oranges (peeled and divided into wedges) – 2
  • Raisins – 2 tbsp.
  • Roasted sesame seeds – 1 tbsp.
  • Lemon juice – 1 tbsp.
  • Cayenne pepper – 1 pinch
  • Ground cumin – 1 tsp.
  • Cinnamon – 1 pinch
  • Cilantro (chopped) – 3 tbsp.
  • Olive oil – 3 tbsp.
  • Salt and ground black pepper – to taste
    Recipe Directions:
    Step 1
    Peel the orange wedges from the films and cut each wedge in half. Then place the orange pieces on a sieve and put the sieve over a bowl to drain the orange juice.
    Step 2
    Add lemon juice, cinnamon, cayenne pepper, cumin, and salt to the bowl with the orange juice. Beat with a whisk until the mix becomes smooth.
    Step 3
    Add the orange slices, raisins, and grated carrots to the bowl with the whisked mix.
    Step 4
    Cover the bowl with a lid and shake. Leave for about 5 minutes until liquid drains to the bottom of the bowl.
    Step 5
    Place the salad on a sieve to drain the excess liquid, then put in a fridge for an hour before serving.
    Step 6
    Preheat oven to 350 F. Arrange sesame seeds in a single layer on a baking sheet and bake for about 10 minutes, until golden brown and fragrant, stirring occasionally.
    Step 7
    Take the salad out of the fridge. Sprinkle with the roasted sesame seeds, chopped cilantro and oil, then sprinkle with black pepper to taste. Serve and enjoy!
