Pink salmon cooked in the onion and tomato juice turns out to be a very tender and tasty diabetic-friendly dish.
Ingredients:
Pink salmon – 2.5 lb.
Tomatoes (cut in slices) – 1 large or 20 cherry tomatoes (cut in halves)
Step 1 Wash and dry the fish with paper towels, then cut the fish into strips 0.5” thick. Season with salt and pepper. Step 2 Grease a baking dish with vegetable oil and put the pieces of fish in the baking dish, while adding onion and tomato in between the pieces of fish. Step 3 Top the fish with the sour cream. Step 4 Preheat oven to 390 F and bake the fish until golden brown (about half an hour). Step 5 Sprinkle with the chopped dill and serve. Bon appetit!
