Step 1 In a large skillet, fry the mushrooms in olive oil until a distinct mushroom smell appears. Then add the onion and fry it until tender but not brown yet. Step 2 Add quinoa and garlic to the onion with mushrooms and fry for 3 minutes. Step 3 Add the chicken broth and cook for 15 minutes, stirring constantly. Step 4 Add parsley 5 minutes before the dish is ready. If desired, add chili pepper with parsley. When the dish is ready, take it off the heat, serve hot and enjoy!
