Step 1 Heat oil in a large pot and put chopped onion in there. Step 2 Add bell pepper and cook over medium heat for 5 minutes, stirring periodically. Then add garlic and cook for 1 more minute, stirring. Step 3 Add eggplants, zucchini, water and black pepper. Bring the water to boil and reduce heat. Stew over low heat, with the lid on, for about 15 minutes or until vegetables get a bit soft. Step 4 Add tomatoes to the stewing vegetables, stir, and then keep cooking with the lid on for about 4-5 minutes. Step 5 Serve with a sprig of thyme. Enjoy!
