Step 1 Boil the rice noodles as directed on the package, then drain and rinse the noodles. Step 2 Heat the oil in a wok and fry in it the chili pepper, ginger, and garlic. Step 3 Cut the zucchini and carrots into thin strips with a peeler. Step 4 First add the carrots to the wok, stir and fry for 5 minutes over medium heat, then add the zucchini and fry for 3 minutes. Step 5 Add noodles, tofu cubes, and soy sauce to the wok and stir. Simmer for another three minutes. Bon Appetit!
