Step 1 Place a piece of nori sheet on a sushi mat or wax paper if you don't have a mat. Step 2 Gently spread the cream cheese on one end of the nori sheet. This should be the outside that you cover when you roll the sushi - the cream cheese helps the sheet stick. Step 3 Spread the guacamole in the center of the nori sheet and add some lime juice on top. Step 4 Place the cucumber and carrot slices on the other end of the nori sheet like cream cheese. Make sure everything is aligned in length. Step 5 Then add the salmon – it should be a thin layer between cream cheese and vegetables. Step 6 Starting at the end of the vegetables, gently roll up the wax paper to start rolling the nori, just like you would with regular sushi. You must roll up and remove the waxed paper while continuing to roll the piece. When finished, you should be left with a roll with a diameter of about 1 ½ ”. Step 7 Repeat the same process with all the other nori sheets. Step 8 Fold the rolls together and then cut them into 1/2” slices. You should keep them together as this will help protect the nori from breaking down during cutting. Serve and enjoy!
