Step 1 Peel the pumpkin, cut into cubes and put in a saucepan. Pour over vegetable broth, bring to a boil and leave on fire for 10 minutes, then remove the pumpkin with a slotted spoon. Step 2 Heat the peanut butter in a frying pan and sauté the garlic and onion over low heat until transparent. Step 3 Put the pumpkin in the frying pan, sprinkle with salt and cinnamon, cook until ready (golden brown and tender), stirring from time to time with a wooden spoon. Step 4 Add the tofu pieces, cook for 3 more minutes over medium heat, then sprinkle with pine nuts if desired and with chopped chili. Serve hot. Enjoy!
