This diabetic-friendly dinner entrée is very delicious and flavorful. The fish is marinated because tuna absorbs and retains the aromas of sauces and marinades very well, and Brussels sprouts perfectly complements the fish.
Step 1 Make a marinade for the fish: In a deep bowl, mix olive oil, sesame oil, lemon juice, soy sauce, chopped garlic, and a pinch of salt and black pepper. Step 2 Cut the tuna fillet into two steaks, each about an inch thick. Step 3 Put the pieces of tuna in a bowl with the marinade and roll the fish in it on all sides. Leave the tuna to marinate for 20-30 minutes. Step 4 Boil water in a small saucepan, add a little salt and then add the Brussels sprouts. Boil for about 6 minutes – otherwise the Brussel sprouts will lose taste and color. Throw in a colander and dry. Step 5 Heat a grill pan over high heat and then add a bit of olive oil on it. Put the tuna steaks on the pan and fry until a crust appears on each side (about 5 minutes per side), while the inside of the tuna should remain pink. Step 6 Heat a small frying pan over medium heat and then add the remaining olive oil and butter. Step 7 Put the Brussels sprouts into the frying pan, stir, add chopped garlic and a couple of pinches of ground nutmeg. Stir again and fry until Brussels sprouts becomes light golden brown. Step 8 Put the tuna steaks and the fried Brussels sprouts on the plates. Pour a little oils and garlic mix from the frying pan on top. Serve and enjoy!
