This is a recipe for a great tasting, low-carb and diabetic-friendly tuna sushi roll made with cauliflower rice.
Step 1 Cut the cauliflower into small pieces and blend it in a food processor until it looks like rice. Step 2 Place the processed cauliflower on a baking sheet lined with aluminum foil. Mix the cauliflower with olive oil and then spread it evenly on the sheet. Step 3 Preheat oven to 425 F. Roast the cauliflower in oven for about half an hour, stirring periodically to cook evenly. Step 4 Chop the tuna, then mix it with the avocado mayonnaise, a pinch of salt, and sriracha (if desired). Step 5 Cut the cucumber into long thin strips and the avocado into thin slices. Step 6 Place the nori sheet on a bamboo mat or towel and cover it with the cooked cauliflower rice. Make sure to leave a ½” gap at the end farthest from you. Step 7 Start laying the topping ingredients on the end closest to you, and then start rolling the sushi away from you using the bamboo mat or the towel. Step 8 When the roll is ready, cut it into 6 or 8 slices, then serve with wasabi and pickled ginger.
