This is a diabetic-friendly recipe for a classic Italian-American dish made with a piece of fried and breaded veal, baked with tomato sauce, mozzarella, and parmesan cheese.
Step 1 In a frying pan, heat 1 tbsp. of olive oil over medium heat, add garlic and sauté for half a minute. Add the cayenne pepper, tomatoes, sweetener, and half the oregano, stir well and simmer for 20 minutes, stirring occasionally. Season with spices if desired. Step 2 Put the flour in a bowl and add spices. In another bowl, beat eggs with 2 tbsp. of water. Combine the breadcrumbs with the remaining oregano and spices and add to the third bowl. Step 3 Beat the meat with a meat hammer to a thickness of ¼” or less. Dip the meat first in flour with spices, then in the beaten egg, and then in the breadcrumbs. Step 4 Heat the remaining olive oil in a large skillet and fry the veal chops until golden brown (about 2 minutes per side). Step 5 Preheat oven to Put the veal on a baking dish in a single layer and cover with the just prepared sauce. Sprinkle with parmesan and mozzarella on top. Bake for 20 minutes until golden brown.
